Introduction

Inulin is a mixture of oligoners and polymers of β-(2-1)-fructose derived from natural sources including vegetables fruits Jerusalem Artichoke Turber (Hellanthus tuberosus L) and Chicory roots.

Inulin is classified as " Non-digestible" and low-caloric carbohydrate used in nutrition as a source of dietary fibers. It stimulates the growth of healthy intestinal bacterial whitch support good colon and intestinal health. Reserch has shown that inulin-type fructans and corresponding fermentation products reduce the risks of colon cancer. It could be used to replace fat and sugars for a wide range of application in foods. Inulin dose not affect blood sugar levels. its taste is comparable to sugar (lower sweetness) and it would be an ideal ingredient as a sugar replacement for certain food preparations.

Inulin is a polysaccharide, and it has one-third to one-fourth less food energy than that of sugar and a sixth to a ninth less energy than fat. Many manufacturers are putting it in processed foods because it has tremendous health benefits. It can also be used to replace higher calorie ingredients such as fat, sugar, and flour.
